Ingredients:
- 2 tablespoons dark brown sugar
- 1/2 teaspoon natural Hawaiian Volcano Sea Salt
- 3/4 cup honey-roasted peanuts
- 8 thick slices bacon, cooked crispy
- 1/3 cup creamy peanut butter
- 6 oz bittersweet chocolate
Instructions:
- Prepare the Peanut Mixture: In a food processor, blend the dark brown sugar, natural Hawaiian Volcano Sea Salt, honey-roasted peanuts, and 6 slices of crispy bacon for 20-30 seconds, until finely ground.
- Mix and Chill: Stir the ground mixture with creamy peanut butter until smooth. Cover the mixture and chill for 2 hours.
- Shape the Truffles: Using a rounded teaspoon of the mixture, shape it into 3/4-inch balls. Place the balls on a parchment paper-lined cookie sheet and chill for 1 hour.
- Chop Bacon: Finely chop the remaining 2 slices of bacon into 1/4-inch pieces for garnish.
- Melt the Chocolate: In a microwave-safe bowl, heat the bittersweet chocolate for 30 seconds at a time, stirring in between, for a total of 1 1/2 minutes, or until fully melted and smooth.
- Dip the Truffles: Using a skewer, dip each peanut butter ball into the melted chocolate, letting the excess drip off. Place the coated truffles back on the parchment-lined cookie sheet.
