Bacon-Peanut Truffles

These Bacon-Peanut Truffles are a perfect balance of creamy, crunchy, sweet, and salty. The combination of honey-roasted peanuts, peanut butter, and crispy bacon creates a rich filling, while the bittersweet chocolate coating adds a luxurious touch. Each truffle is finished with a salty bite from the Hawaiian Volcano Sea Salt and crispy bacon garnish, making these truffles a truly decadent treat for any occasion.

Can be made ahead and stored in an airtight container up to 2 weeks.

Ingredients:

  • 2 tablespoons dark brown sugar
  • 1/2 teaspoon natural Hawaiian Volcano Sea Salt
  • 3/4 cup honey-roasted peanuts
  • 8 thick slices bacon, cooked crispy
  • 1/3 cup creamy peanut butter
  • 6 oz bittersweet chocolate

Instructions:

  1. Prepare the Peanut Mixture: In a food processor, blend the dark brown sugar, natural Hawaiian Volcano Sea Salt, honey-roasted peanuts, and 6 slices of crispy bacon for 20-30 seconds, until finely ground.
  2. Mix and Chill: Stir the ground mixture with creamy peanut butter until smooth. Cover the mixture and chill for 2 hours.
  3. Shape the Truffles: Using a rounded teaspoon of the mixture, shape it into 3/4-inch balls. Place the balls on a parchment paper-lined cookie sheet and chill for 1 hour.
  4. Chop Bacon: Finely chop the remaining 2 slices of bacon into 1/4-inch pieces for garnish.
  5. Melt the Chocolate: In a microwave-safe bowl, heat the bittersweet chocolate for 30 seconds at a time, stirring in between, for a total of 1 1/2 minutes, or until fully melted and smooth.
  6. Dip the Truffles: Using a skewer, dip each peanut butter ball into the melted chocolate, letting the excess drip off. Place the coated truffles back on the parchment-lined cookie sheet.
  7. Garnish and Chill: Top each truffle with a piece of chopped bacon and a sprinkle of natural Hawaiian Volcano Sea Salt while the chocolate is still wet. Chill the truffles for 30 minutes before serving.
