Cold Black Bean & Quinoa Salad

Ingredients:

  • 2-3 boiled, diced new potatoes
  • 1 can black beans, rinsed
  • 1 cup cooked quinoa
  • 1 cucumber, diced
  • Fresh cilantro, chopped (to taste)

  • Extra virgin olive oil (EVVO)
  • Juice of 1 lime

Instructions:
