Preparation Instructions

  1. Hatch duck breast on the fat side.  Put fat side down in a cast iron skillet over medium-low heat to render fat
  2. Flip duck over and cook over high heat on the meat side just until medium-rare
  3. Plate, adding Kiawe salt to the fat side of the cooked duck
