Cast Iron Seared Duck
Preparation Instructions
- Hatch duck breast on the fat side. Put fat side down in a cast iron skillet over medium-low heat to render fat
- Flip duck over and cook over high heat on the meat side just until medium-rare
- Plate, adding Kiawe salt to the fat side of the cooked duck

- Asparagus with Hollandaise sauce and Hawaiian Volcano Kiawe Sea Salt
